Scampi Salad with Horseradish Dressing

Makes 4 servings.
2 cups mizuna lettuce
2 cups bib lettuce, torn
16 shrimp, poached in garlic and butter, with shell on
1 cup pickled red onions
2 Tbsp fresh horseradish
1/2 cup grape seed oil
1/4 cup champagne vinegar
2 Tbsp Dijon mustard
2 Tbsp fresh lemon juice
Kosher salt, to taste
Freshly ground pepper, to taste
Add the lettuces, shrimp and onions to a large mixing bowl. Toss gently to combine.
In a medium bowl, combine horseradish, oil, vinegar, mustard, lemon juice, salt, and pepper; whisk until well incorporated.
Pour dressing over the salad and toss gently until everything is well coated. Transfer to a serving bowl or individual dishes, and serve.
