Pasta Salad with Farfalle, Diced Ham & Sweetcorn

For the Dressing:
2 tbsp. of mayonnaise
1 tbsp. of champagne vinegar
1 tbsp. of extra virgin olive oil
kosher salt, to taste
freshly ground black pepper, to taste

For the Pasta Salad:
1 pound of farfalle pasta, or pasta of choice
1 cup of corn kernels, frozen and thawed or canned
1 cup of diced ham
1 cup of diced red bell pepper
1 tbsp. of sliced scallion
2 tbsp. of fresh chives, chopped

For the Dressing:

Combine all ingredients into a small jar with a tight fitting lid. Shake vigorously until completely incorporated. Set aside.

For the Salad:

1. Prepare pasta according to package instructions. Let cool.

2. Once the pasta has cooled, place the corn, ham, and bell pepper, with the pasta, into a large mixing bowl.

3. Pour the prepared dressing over the top of the salad and toss until well coated. Garnish with chives when ready to serve.
