Anna Olson’s Arugula Salad with
Avacado, Blackberry & Feta









Sometimes simplest is best.  Composing this salad is easy – but take the time to appreciate the complexity of the combinations of flavours. This salad’s vibrancy comes from the avocado for its creaminess, the feta for its saltiness, the blackberries for their sweetness & tartness and the arugula for its peppery bitterness. Who guessed a salad could be so fulfilling?

Serve this salad as a starter to a summer supper, or serve it alongside grilled fish or chicken.

Serves 6
Prep Time: 15 minutes
Difficulty: easy

6 cups of washed and trimmed arugula
1 ripe avocado     
½ pint fresh blackberries
½ cup crumbled feta cheese
juice of 1 lime
extra virgin olive oil
salt and pepper

Arrange arugula onto 6 salad plates.
Cut the avocado in half and peel.  Slice and arrange the avocado over greens.
Wash the blackberries and sprinkle overtop, then top with feta cheese.  Sprinkle the salad with lime juice and olive oil and season lightly with salt and pepper.
